What is a firkin?

A firkin is a small cask (yielding between 9-10 gallons) that is traditionally used to create “real ale” where the beer undergoes a secondary fermentation or finishes primary fermentation in the bunged/sealed cask to produce a naturally carbonated beer. The beauty of a firkin is that the belly-bung hole, or “shive” as it is properly referred to, is a port hole that is open (until filled and bunged) allowing for additions of any number of ingredients to age our beer with to create fun, interesting and sometimes wildly non-traditional one-off beers to share with you all on a monthly basis.
